Stock & Bond Steakhouse Opens in Historic Minneapolis Venue

A new culinary destination is set to open in downtown Minneapolis, as the highly anticipated Stock & Bond steakhouse prepares to debut on July 31, 2023. Located within the historic Farmers and Mechanics Savings Bank, the restaurant aims to blend American craftsmanship with a vibrant, modern aesthetic. This marks the second location for chef and restaurateur Tom Dillon, who first launched Stock & Bond in Oklahoma City three years ago.

Dillon was not initially seeking to expand his brand, but upon visiting the former Bank restaurant space, he felt drawn to its rich history. “It’s rare that you get a space with this much history behind it,” Dillon said, referencing the building constructed in 1942. After a substantial multimillion-dollar renovation, the restaurant is ready to welcome guests.

A Culinary Experience Rooted in Passion

Leading the kitchen is executive chef John Sobojinski, a Minnesota native with an impressive background, including stints alongside renowned chefs such as Missy Robbins and Jean-Georges Vongerichten. Sobojinski has curated a menu that retains popular dishes from the original location while introducing unique items that reflect local tastes. His offerings include a roasted sage chicken and adaptations of classics like short rib ravioli and poached halibut.

The restaurant will feature high-quality ingredients, sourcing heritage Angus beef from the Linz family ranch in Oklahoma and wagyu from Fellers Ranch in Minnesota. The seafood program will include a raw bar with an array of options, such as a chilled seafood tower that showcases oysters, shrimp, lobster, and yellowfin tartare. Stock & Bond will initially serve breakfast and dinner, with plans to introduce a lunch menu aimed at revitalizing the power lunch culture in downtown Minneapolis.

Pricing will cater to various budgets, with dinner starters ranging from $15 for salads to $32 for caviar tots. Non-steak entrees will be priced between $42 and $48, while steaks will range from $44 for an 8-ounce skirt steak to $105 for an 18-ounce prime rib-eye. For breakfast, options will start at $6 for pastries and go up to $32 for steak and eggs.

A Unique Bar Experience

Bar manager Ross Nelson, formerly of Daniel del Prado Hospitality Group and Tilia, has crafted an extensive selection of American whiskeys, bourbons, and ryes, aiming to build a list of over 1,000 varieties. The cocktail menu will feature a mix of spirit-forward creations, including the Bonded & Washed, made with beef tallow-washed rye, alongside refreshing options like the Kentucky Maid, which combines bourbon with mint, cucumber, lemon, and simple syrup.

In addition to cocktails, Stock & Bond will offer a varied wine list, featuring selections from notable regions such as Napa, Sonoma, Willamette, and Columbia Valley. The beer selection will include both local and regional brands, with pricing for cocktails ranging from $17 to $26 and wines by the glass priced between $14 and $25.

A Stunning Interior Design

The restaurant occupies an impressive 8,300-square-foot space, redesigned by the internationally recognized firm Wilson Ishihara. The previous monochrome aesthetic of the former Bank restaurant has been transformed into a vibrant art deco-inspired environment. Key features include original lotus-blossom chandeliers and carved wood panels, complemented by custom millwork and bold patterns.

The design aims to create a modern yet opulent atmosphere, with seating for 250 guests. The space includes a long bar, semi-private lounges, and five private dining rooms. Artist Aaron Petz has contributed to the interior with a striking gold-etched mural that references the building’s banking history, alongside works by local artists Tara Costello, Tim Tozer, and Jeremy Szopinski.
